These ‘dulce de membrillo’ (quince cheese) hearts were made specially for Valentine’s Day for the wonderful Wildes Cheese. Quince cheese varies in colour from apricot to a rich deep red (the latter often called ‘carne de membrillo’ in Spain – literally ‘quince meat’). The colour depends on a variety of things, not all of which are easy to control although I was certainly keen to try. And the result? Hearts in a fitting shade of deep Valentine’s red. Marvellous.
